Heaven and Hell Cake with Fireball Buttercream

This is a very conflicted cake.   It’s like Mae West said: when I good, I’m good, but when I’m bad, I’m better.  It’s got angel food and devils food.  It’s sweet but then comes the spice.  If that wasn’t enough,  we have the fireball buttercream frosting.   So don’t choose a side, just enjoy.  I hope you like it.
Heavenly angel food cake:
6 egg whites at room temperature
1 1/4 cup superfine sugar*
1 teaspoon cream of tartar
2 tablespoons water
1/8 teaspoon salt
1 teaspoon vanilla
3/4 cup flour, sifted
Preheat oven to 350
Sift 1/2 sugar with flour and salt
In a large bowl, place eggs, water, vanilla, and cream of tartar; mix until medium peaks form
Add remaining sugar and beat two minutes
Sift the flour mixture over the top of foam
Combine with a spatula, folding in flour; continue process until all flour is used
Evenly spoon into greased 9-inch cake round and smooth top
Bake for 21 – 25 minutes or until a toothpick comes out clean
* If you can’t find superfine sugar, use a Nutra blender and blend 1 cup of granulated sugar for 20 seconds
Devils Food cake:
Dry ingredients:
3/4 cup ap flour plus 3 tablespoons
1/2 cup cocoa powder
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon cayenne pepper
1/2 teaspoon cinnamon
Wet ingredients:
6 tablespoons unsalted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
3/4 cup milk
1/4 cup coffee
In bowl one, mix flour, cocoa, salt, baking powder, cayenne pepper, cinnamon, and salt
In bowl 2, cream butter and sugar until smooth
Add eggs and beat for two minutes
Add vanilla and beat
Add milk and coffee and beat
Add flour mixture to wet ingredients in three parts; mix until smooth
Pour into greased and floured a 9” cake  pan
Bake for 20-25 minutes or until a toothpick comes out clean
Frosting:
2 sticks unsalted butter
1/2 cup shortening
1/2 cup whipping cream
8 cups powdered sugar
4 teaspoons Fireball whiskey
1/2 teaspoon salt
Cream butter and shortening for 3 minutes
Add whipping cream and salt; beat for 1 minute
Add Fireball
Add powdered sugar 1/2 cup at a time; beat until smooth and spreadable
Assembly:
Place devils food layer
Place layer of frosting
Place angel food layer
Frost the rest of cake
