I’m staying on a summer theme with a margarita cheesecake. Lime, orange, creamy cheesecake, and tequila with triple sec. You also have a tasty vanilla wafer crust. So have dessert on the deck under the umbrella. I hope you like it.
Crust:
1 1/4 cup vanilla wafers, crushed
4 ounces butter, melted
2 tablespoons sugar
Filling:
12 ounces cream cheese, softened
2 eggs
1 egg yolk
8 ounces sweetened condensed milk
1/2 teaspoon baking powder
1 ounce tequila
2 ounces triple sec
2 ounces lime juice
2 teaspoons lime zest
1 teaspoon orange zest
Preheat oven to 350.
In a bowl mix sugar, melted butter, and vanilla wafers.
Place mixture in the bottoms of 4 ramekins.
In a new bowl, whip cream cheese.
Add eggs and egg yolk and whip.
Add condensed milk.
Add tequila, triple sec, lime juice, and whip until smooth.
Add baking powder.
Add zest and whip for 5 minutes.
Pour cream cheese mixture into remakins on a baking sheet.
Bake for 40- 50 minutes; rotate after 20 minutes.
