I got a text that read as follows:
“Best way to include smoked salmon in an egg related breakfast- go!”
It took me back many years: I was in the Portland airport waiting for a flight at 5:30 in the morning, and I had something similar. There were a couple of updates – the Roommates came up with the kale, and I added the goat cheese. The result is Roommate approved. I hope you like it.
3/4 pounds smoked salmon cut in bite size piece
4 ounces capers
8 ounces goat cheese
1 cup kale or arugula
2 ounces chives
6 large eggs
4 tablespoons unsalted butter
4 everything bagels
Heat a large skillet to medium.
Add butter and heat until just bubbling.
Split bagel and toast.
Beat eggs.
Pour eggs into pan; wait 15 seconds and stir.
Add capers and stir.
Add salmon and stir. (Save some salmon for garnish.)
Add goat cheese.
Add chives.
Top bagels with mixture.
Top with remaining salmon, kale or arugula.
