I am in a chocolate mood. I want rich chocolate, but it’s breakfast time; it would be wrong to have chocolate. Not if you make a breakfast food. How about a chocolate pancake, but let’s add the stuff of German chocolate cake: pecans, coconut, caramel. A side of bacon or sausage and you’ve got yourself a winning breakfast or brunch dish. I hope you like it.
Dry ingredients:
1 3/4 cups flour
1/4 cup sugar
1/2 cup cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Wet ingredients:
2 cups milk
2 eggs, beaten
Topping:
15 ounces sweetened condensed milk
1 cup sweetened coconut
1 cup brown sugar
1 teaspoon vanilla
1/4 cup chopped pecans
In bowl, mix all dry ingredients..
Add egg and milk and mix until the mixture comes together.
In a sauce pan, cook condensed milk and brown sugar; boil for 5 minutes.
Add coconut and mix.
Add pecans.
Add vanilla.
Heat griddle to medium.
Add batter to griddle.
Brown on each side.
Top pancakes with caramel sauce.
