This is pure football watching food fun. You’ll surprise your friends and family and satisfy the the carnivore in anyone. It look like a simple egg roll but takes you to a pulled pork sandwich hidden inside. You have a crispy egg roll, creamy mac and cheese, tangy bbq sauce, and savory pulled pork. Dip in your favorite bbq sauce, grab a beer, and you’re ready for a game.
16 ounces pulled pork (I cheated and got some pulled pork from my local bbq place. This is game day; you don’t have 6-8 hours.)
12 ounces mac cheese (Check out this blog for recipe. If your bbq place has good mac and cheese, but that too.)
4 ounces favorite bbq sauce (This means opening a bottle; you got this, right?)
8 egg rolls wrappers
Oil for frying (If you try to bake them, just throw them in the trash – it won’t work. This is football food, ya’ll. )
1 bunch green onion (optional)
Lay out egg roll wrapper.
Add 1 heaping tablespoon of pork and mac and cheese in center of wrapper and top with bbq sauce.
Wet edges of wonton wrapper with water.
Arrange wrapper to point with corners pointing north, south, east, and west. Take corner pointing toward you and fold over filling; fold in sides, and roll upwards, sealing edges to keep filling in. If you have tears or leaks, food will fall out. Roll it tight.
Repeat for each egg roll.
Heat oil to 350.
Cook egg rolls 3 minutes per side until golden brown.
Ok, you can tell by my photos that I suck at rolling egg rolls.
