Sweet Potato Fries with Creole Seasoning Crisped in Duck Fat

This one is a little labor intensive but worth the results.  Who doesn’t like a crispy, spicy, sweet potato fry? Now, we start with air frying the sweet potato until just done.  Then we do a quick pan fry in duck fat to crisp the potatoes; that keeps the seasoning on the fries, not on the plate.  I hope you like it.
 
Bag sweet potato fries 
Creole spice blend:
  1 teaspoon black pepper
  1 teaspoon salt
  1 teaspoon cayenne pepper
  1 teaspoon hot paprika   
  1 teaspoon white pepper
  1 teaspoon garlic powder
  1 teaspoon onion powder
  1 teaspoon oregano 
  1 teaspoon thyme 
  1 teaspoon rosemary 
1 cup duck fat
1 air fryer
1 10-inch skillet
 
Cook sweet potato fries for 15 minutes in air fryer at 400 until just done but not crispy.
 
Mix all spices and herbs.
 
In skillet on medium high, melt duck fat.
 
Add 1 fry to check that oil is hot.
 
Add sweet potatoes and cook until crispy – about 3 minutes per side.
 
Sprinkle potatoes with herb mixture.
