Grape Cake

Grape cake is an Italian New Year’s tradition. It’s not overly sweet and is served from dawn to dusk. I added a little extra flavor by adding the orange liqueur and some different zests than the traditional cake. I hope you like it.

Dry ingredients:
1 1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon lemon zest
1 teaspoon orange zest

(If you want to go non-traditional, add a little cinnamon.)

Wet ingredients:
3/4 cup sugar
4 ounces butter at room temperature
2 eggs
1/3 cup olive oil
1/3 cup milk
1 teaspoon vanilla
1 teaspoon orange liqueur
20 red or black grapes (seedless)

Preheat oven to 350.

In bowl 1, mix flour, baking powder, salt and the two zests.

In bowl 2, cream butter and sugar.

Add olive oil and milk and mix.

Add eggs and mix.

Add vanilla and orange liqueur.

Add dry ingredients into wet and mix.

Pour ingredients into a buttered 9” cake pan.

Add grapes on top of batter in the pan.

Bake for 24-28 minutes.
