Every week on the shopping list sits the words “chicken breasts.” If I have to suffer through another stinking air fryer chicken breast or in-the-oven-coated-with-BBQ-sauce, I am going to lose what few wits I have left. I can not, will not eat food without taste. I should not, could not eat what tastes like paste. So flavor is the objective. I attacked the panty and the freezer and found flavor for my taste buds and my wits. I hope you like it.
4 chicken breasts
1/2 pound chorizo sausage (out of the casing and crumbled)(from Happy Family Ranch)
1 32-ounce can crushed tomatoes
1 medium yellow onion, diced
1/2 pack low sodium taco seasoning
4 tablespoons olive oil
1 cup Colby jack cheese, grated
Heat oven to 350.
Heat an oven safe skillet to medium and add olive oil; brown chorizo and cook with onions for 5 minutes.
Coat chicken with taco seasoning and add to the pan; cook for 3 minutes on each side.
Add crushed tomatoes.
Place in oven for 25 minutes.
Add cheese and cook for 15 minutes.
Check that internal temperature is 165.
Serve with vegetables.
