Winter salad

After all the heavy holiday foods, it’s time for a salad. I used winter ingredients and made is as healthy as I can eat.

1/4 cup mayo
1/4 cup maple syrup
3 tablespoons pomegranate vinegar
3 tablespoons shallot
1/2 teaspoon black pepper
2 tablespoons sugar
1/2 cup olive oil
10 oz bag spring mix
1 mandarin orange
1 cup dried cranberries
1/2 cup slivered almonds
1/2 red onion sliced thin

Mix mayo, honey, pomegranate vinegar, pepper

Drizzle in olive oil.

Mix spinach, almonds, shallots, onions, oranges cranberries. Then top with dressing
