Spicy Potatoes Au Gratin

This is a classic stick-to-your-ribs dish. It’s even a cold-down-south dish. High starch, high cheese, high fat, just plain rich. I hope you like it.

3 tablespoons flour
3 tablespoons butter
1 teaspoon season salt
1/2 teaspoon black pepper
1/2 teaspoon hot Hungarian pepper
2 cups whole milk
5 cups potatoes, sliced thin
1/3 cup diced shallots
1/2 cup cheddar cheese
1/2 cup gruyere cheese

Preheat oven to 350.

Slice potatoes thin using a mandolin.

In a large sauce pan on medium low, melt butter and add flour; stir and let cook for 4 minutes.

Add milk and stir for 4 minutes.

Add shallot and cook for 1 minute.

Add garlic powder, seasoning salt, paprika, and pepper.

Add cheese and stir until smooth.

In a casserole dish, alternate layers of potatoes and cheese sauce.

Bake at 350 for 65 minutes until potatoes are tender.
