I was at the farmers market, and the bread guy had some scones for sale. That sent me to the kitchen. Spring flavors include blueberries and lemon to me, so that is the flavor. Now one thing I do is put in a little more baking powder than most recipes, so I can get a lighter scone. I hope you like it.
1 1/2 cups flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon lemon zest
1/4 teaspoon salt
3/4 cup blueberries
1/2 cup sugar
1 teaspoon vanilla
1 cup whipping cream
2 teaspoons melted butter to brush on top
Preheat oven to 425.
Mix flour, baking powder, salt, 1/4 cup sugar, and lemon zest.
Add milk and vanilla.
Add blueberries.
Knead 10 times.
Press down with fingers until you make a 7-inch circle.
Cut into 8 equal triangles.
Place on parchment-lined baking sheets.
Brush with butter.
Bake for 16-20 minutes until golden brown.
Serve with coffee, butter, jam, and a beautiful spring morning.
