Mousel Frites with Wine and Green Curry

This is a French classic. It’s mussels and fries. And that’s all the French I know. Oh wait, “oui”.

2 pounds mussels, cleaned
2 cups wine
1/4 cup red onions
1/2 leek clean and cut in 1/8 inch rounds
3 ounces Canadian bacon
1 teaspoon fresh garlic, chopped
2 tablespoons green curry
2 tablespoons olive oil
24 ounces French fries
1/2 cup mayo
1 teaspoon Old Bay
1 teaspoon capers
1 teaspoon sweet pickle relish

In an oven, cook fries per package directions (but I hit the broiler the last two minutes).

In a bowl, add mayo, Old Bay, capers, and relish and mix thoroughly.

In a large skillet, add olive oil, leeks, and onions; cook for two minutes, then add mussels and garlic.

Add wine and curry.

Cover and cook until the mussels open; serve in bowl with some of the liquid.

Server with fries, sauce, and a piece of French baguette.
