Lamb Chops w Balsamic Raspberry Sauce

it is tradition I’m my home to have lamb on Holy Thursday but with only two of us and one who doesn’t like lamb something simple is the rule but hey it’s a rule, I broke it. I still only took 40 minutes so I guess it is easy. The sauce is sweet tart with a little kick from the Dijon mustard. I hope you like it.

2 lamb chop
3 lamb pops
8 oz raspberries
2 oz balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
2 oz maple syrup
Olive oil for cooking
2q tablespoons Dijon mustard

Make your favorite mash potatoes I use packaged

Preheat oven to 350

In a sauce pan mix syrup, balsamic, Dijon and raspberries cook on medium low for 20 minutes until berries break down and strain out seeds. Let sit

Heat cast iron skillet to medium or oven safe pan until it smokes

Salt and pepper lamb chops and pops

Add chops and pops sear and brown for 90 seconds

Coat chops with a thin coat of sauce

Place in oven pops for 5 minutes chops for 7 minutes let rest for 10 minutes

Serve with mashed potatoes
