Who said Easter eggs have to be traditional?How about something with some heat to go against that salty honey baked ham? (Or if you are a Proper Southerner, Dr. Pepper ham.) Add some charred jalapeño with some Dijon and some chipotle powder. I hope you like it.
6 hard boiled eggs (I couldn’t find rabbit eggs.)
1 jalapeño pepper, roasted, seeded, and diced fine (You can use a poblano if you can’t take the heat.)
1 teaspoon smoked paprika
1/4 cup mayo plus one tablespoon
2 teaspoons Dijon mustard
2 teaspoons diced green chives, divided
1/4 teaspoon chipotle powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon cilantro, chopped fine
Char jalapeño in a hot skillet on all sides and place in a plastic bag
Remove seeds and finely dice jalapeño
Cut eggs in half lengthwise.
Remove yolks and put them in a bowl.
Add Dijon and mayo to bowl and mix until smooth.
Add salt, pepper, 1 teaspoon chives, and cilantro and mix.
Fill eggs with yolk mixture and top with paprika and remaining chives.
Add jalapeño and mix
Serve.
