This is a treat served in Mexico. I used Happy Family Ranch’s Chorizo because well, that’s what I used because it’s great chorizo . So getting the right proportions was key. A taste test panel agreed I got it right. (Ok, it took me four tries; it only took Goldilocks three). Serve it with fresh pico de gallo and smoked cheddar. Oh, I forgot to say it was in a slider bun with some fresh avocado. I hope you like it.
1 pound ground beef (Happy Family Ranch)
2/3 pound chorizo (Happy Family Ranch)
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 pound smoked cheddar cheese slices
8 ounces pico de gallo
4 ounces avocado
8 slider rolls
In a bowl, mix hamburger, chorizo, paprika, and chili powder.
Cook patty to 155 well-done because you have ground pork – about 5 minutes per side.
Toast bun.
Place slider on bun bottom.
Add cheese.
Add Picco de gallo.
Add avocado.
Top with bun.
Serve.
