Bacon is great. Everything is better with bacon. So bacon would work with chocolate and chili, right? Guajillo chilis are more fruity than hot although you do get a little back heat. Semi-sweet chocolate mixes well with the fruity notes and the smoky bacon. Brings these to your next BBQ pot luck.
1 pound thick cut bacon
1/2 cup semi sweet chocolate chips
2 tablespoons cream
1/2 teaspoon guajillo chili powder
1/2 teaspoon sea salt
Preheat oven to 400.
On a rack over a baking sheet, place bacon strips.
Bake for 18-25 minutes until bacon is crispy.
In microwave melt chocolate chips on high in 25 second burst and stir after every burst.
Add cream and stir until smooth.
Add chili powder and stir.
Dip top half of each bacon strip in chocolate and make sure both sides covered; then place on wax paper until chocolate sets.
Sprinkle very lightly with salt.
Serve .
