Canadian Nanaimo

This is the unofficial dessert of Canada named after a city in British Columbia. Every province has a version of it; the one I chose was from Quebec because of its simplicity. Now, I left out the coconut flakes because my kids aren’t fans, but you do you. The great part is that this is a no-bake recipe. I hope you like it.

Crust:
1 1/2 cup graham cracker crumbs
1/2 cup butter, melted
1 cup walnuts, chopped fine
5 tablespoons cocoa
1/4 teaspoon salt
Filling:
4 tablespoons butter, softened
4 tablespoons cream
8 ounces cream cheese
3 tablespoons vanilla instant pudding mix
2 cups confectioners sugar
Topping:
4 ounces dark chocolate chips
2 tablespoons cream

Crust:

Mix nuts, cocoa powder, salt, and graham cracker crumbs.

Add butter and mix; place in serving pan.

Filling:

In a bowl mix butter, cream cheese, and cream.

Add pudding powder and mix for 4 minutes.

Add confectioners sugar and mix for 2 minutes.

Spread over crust gently and refrigerate for 20 minutes.

Topping:

Place chocolate chips and cream in a microwave safe bowl.

Microwave in 25 second bursts and stir; continue until everything is smooth. Let cool for 10 minutes.

Spread over dessert.

Chill for one hour.

Serve.
