Bbq peanut brittle

I have remembered my Aunt Carol in this blog in the past (the best apple pie). This was the time each summer that she would come for a visit in Northern Michigan and go to Mackinac for some peanut brittle.  I did a recipe a few years back for normal brittle, but this is BBQ brittle – something spicy for football watching and tailgating.  Spicy and robust.   I hope you like it.

1 cup corn syrup
2 1/2 cups sugar
4 tablespoons butter cut in small pieces
2 cups bbq peanuts
1 teaspoon chipotle seasoning
1 teaspoon bbq seasoning
1/4 teaspoon salt
1/2 teaspoon cumin
1 teaspoon of baking soda
1 teaspoon bourbon
1 teaspoon vanilla

In a bowl. add peanuts, salt, chipotle powder, cumin, and bbq seasoning and mix though.

In a large sauce pan, add 2 cups of sugar and corn syrup.

Add 3 tablespoons of butter and stir. 

Cook stirring until mixture reaches 280. 

Add last tablespoon of butter and vanilla and bourbon; stir until temperature reaches 280.

Add peanut mixture and stir. 

Add baking soda and stir to make sure everything is combined.

Pour on a parchment lined baking sheets.

Cool and brake into pieces.
