Montreal Rib Steak with Blue Cheese Topping

This is a week night steak recipe. Plain and simple, down and dirty, one pan, little clean up, and above all, tasty.. I found Oopah’s cheeses at the Manassas Farmers’ Market last weekend and tried their cheese spread for the first time. It is like a compound butter with more punch. Good stuff – check them out. I used Happy Family Ranch steaks; they were the perfect 8-ounces so with a salad, a great week night meal.

2 8-ounce rib steaks (I got mine at Happy Family Ranch)
2 1/2 teaspoons Montreal steak seasoning which includes (if you make it yourself):
1 teaspoon salt
1/2teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon red pepper
1/4 teaspoon paprika


2 1/4 cups of Oopahs Uderistic blue cheese spread

Heat oven to 350.

Rub steak with olive oil.

Sprinkle with Montreal seasoning on both sides.

Heat oven safe (I used cast iron) pan to medium high (the pan should begin to smoke).

Place steaks in pan for 3 minutes per side.

Place pan in oven for 10 minutes or until internal temperature reaches 125 for medium rare.

Top with Oopahs Uderistic blue cheese spread.

Serve with salad.
