Spicy Grilled Cheese


It’s fall and time for some old time hearty food. I think the grilled cheese sandwich is a fall food. Now I used 4 cheeses so I had to cut all that rich cheese; so I used some salty bacon, some avocado and for some kick quick pickled spicy banana peppers. I hope you like it.

4 slices 3 cheese semolina bread
8 slices bacon
1 hot banana pepper pickled
1 cup water boiling
1/4 cup sugar
3 tablespoons salt
4 slice smoked cheddar
4 slices Colby jack
4 slices smoked Gouda
4 slices sharp cheddar
1 avocado
Butter for the outside of the bread

Cook bacon to crisp

Boil one cup of water add salt and sugar let sit for 20 minutes

Remove avocado from skin and mash

Butter one side of each slice of bread

Place one slice each smoked cheddar, smoked gouda, Colby Jack, and cheddar on non butter side of one slice

Add avocado, pepper slices and bacon to the second piece of bread

Put the second piece of bread on the first butter side up

Heat a flat pan to medium place sandwich butter side down and cheese towards the bottom top with heavy pan to press down sandwich and cook until brown

Flip sandwich over and use second pan to press down

Cook until brown on second side and cheese is melting out
