Sweet Potato & Kale

I know I don’t do a lot of veggie dishes and don’t bet money that will change. This has veggies I like – sweet potatoes, kale, and red onion. It also has spices I love – cumin, red pepper, cinnamon and lots of pepper. I added a little apple cider to sweeten everything up. I hope you like it.

2 medium sweet potatoes, diced
1 bunch kale (stems removed)
1 small red onion, diced
2 tablespoons oil
1 teaspoon cumin
1/2 teaspoon cinnamon
1/2 tablespoon salt
1 teaspoon chili powder
1 teaspoon pepper
1/4 tablespoons apple cider

3 tablespoons cooking oil

3 strips of bacon, cut fine and crispy (optional)

Add oil to pan on medium.

Add onion and cook for 2 minutes.

Add sweet potatoes and cook until they start to brown; keep moving so as not to burn.

Add garlic and stir.

Add kale.

Add cumin, chili powder, cinnamon, salt, and pepper.

Add apple cider

Cover and cook until kale is soft, about 7-10 minutes.
