Clams Casino

This is another old school dish your parents might have ordered on a night out on town. You still might find it in that steakhouse at the beach where the locals go, you know the one with the dark wood panelIng and the bad lighting. Well it’s still is a classic and still tasty if you remember to clean the clams and use quality ingredients from trusted sources like Crosby’s Crabs and Happy Family Ranch. I hope you like it.

6 top neck clams cleaned and purged
1/2 cup red onion finely diced
2 cloves garlic
1 strip bacon finely diced and crispy
2 tablespoons parsley
3 tablespoons sherry
1/2 teaspoons red pepper flakes
1/4 teaspoon black pepper
1 stick butter melted
Topping
3 strips bacon
1/4 cups parmigiana cheese
1/2 Panko bread crumbs
Lemon wedges for serving

Preheat oven to 350

Clean clans in cold water for 45 minutes

Shuck to half shell

Mix in bowl butter onions, garlic, parsley, and bacon

Add bread crumbs, parmigiana cheese and bacon

Add sherry and mix

Place clam on shell and filling and topping

Bake for 12 minutes

Serve with lemon wedges
