This is another old school dish your parents might have ordered on a night out on town. 6 top neck clams cleaned and purged
1/2 cup red onion finely diced
2 cloves garlic
1 strip bacon finely diced and crispy
2 tablespoons parsley
3 tablespoons sherry
1/2 teaspoons red pepper flakes
1/4 teaspoon black pepper
1 stick butter melted
Topping
3 strips bacon
1/4 cups parmigiana cheese
1/2 Panko bread crumbs
Lemon wedges for serving
Preheat oven to 350
Clean clans in cold water for 45 minutes
Shuck to half shell
Mix in bowl butter onions, garlic, parsley, and bacon
Add bread crumbs, parmigiana cheese and bacon
Add sherry and mix
Place clam on shell and filling and topping
Bake for 12 minutes
Serve with lemon wedges
