I love me some chocolate, and I love me some really decadent cookies. These cookies fit both bills- super chocolatety, soft, and chewy. Double the chips, lots of cocoa with just enough coffee to make it interesting. I hope you like it.
Dry ingredients:
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon instant coffee
Wet ingredients:
2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
2 large eggs
1 teaspoon vanilla
12 ounces chocolate chips (6 ounces dark, 6 ounces semi-sweet).
Optional: 4 ounces white chocolate chips
In bowl 1, cream butter, brown sugar, and sugar until smooth.
Add eggs and vanilla and beat; set aside.
In bowl 2, add flour, baking soda, baking powder, salt, and cocoa powder and mix.
Mix bowl 2 into bowl 1; make sure everything is incorporated.
Add chocolate chips and fold in evenly.
Refrigerate dough for 20 minutes.
Preheat oven to 350.
Line baking sheets with parchment paper.
Scoop dough on baking sheets.
Bake cookies for 9-11 minutes.
