This one took me a couple of tries to produce a good product. It was one note; cheese crackers. With the addition of fruit and tomatoes (I know they are fruit too) it became a worthwhile side. So this out of the box stuffing. (Pun intended) I hope you like it.
1 12 ounce box cheese crackers
8 ounces Italian sausage
1 carrot diced
2 celery stalks diced
1 medium onion diced
2 cloves garlic minced
3/4 cups chopped apple
2 cups chicken stock
1 teaspoon freshly ground black pepper
2 tablespoons pesto
1/2 cups sun dried tomatoes diced
1/2 cup French fried onions to top
Oil for cooking
Preheat oven to 350
In a skillet cook sausage until brown and remove
In the same skillet add 2 tablespoons of oil
Add onions and celery until soft about 7 minutes
Add garlic and cook for 1 minutes
In a large bowl add vegetables and sausage
Add chopped apples and tomatoes
Add cheese crackers and toss gently
Add chicken stock, black pepper and fennel and toss
Add mixture to a greased small casserole pan
Bake for 40 minutes
