Christmas Cookie Salad

My doctor told me to eat more salads. He was not very specific, so I did some research and found this idea. So I hate to waste perfectly good cookies, so let’s repurpose leftover Christmas cookies to make cookie salad. This dish is said to have started in Minnesota and spread over the mid-west. If you read the ingredients, this should not work,but it does. I hope you like it.

1 3.4 ounce box instant vanilla pudding
8 ounces whipped topping, thawed
8 ounces buttermilk
1 20-ounce can crushed pineapple, drained
8 ounces mandarin orange segments
12 leftover Christmas cookies

In a large bowl, mix together pudding and buttermilk with a whisk for 3 minutes. (It’s going to be thick.)

Mix in pineapple and oranges; refrigerate for 2 hours until just before serving.

Crumble cookies and mix in just before serving.
