Meyer Lemon Scones

I am so sick of winter already. My mind is already in spring mode. I want something to take me to spring in my mind at least. I want to be at breakfast in West Palm Beach in a fruit grove with some tea and a scone. A sunny meyer lemon scone. I hope you like it.

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cardamom
2 teaspoons Meyer lemon zest
1/2 cup sugar
1 cup whipping cream
1 teaspoon lemon extract
2 tablespoons Meyer lemon juice

Glaze:
1/2 cup powdered sugar
1 teaspoon Meyer lemon zest
2 teaspoons lemon juice

Preheat oven to 425.

In a large bowl mix flour, baking powder, Meyer lemon zest, and salt.

In second bowl add cream, sugar and lemon extract. Mix quickly.

Add flour mixture to bowl and mix.

Add lemon juice and mix again. (You didn’t add the lemon juice before because you would have made buttermilk.)

Kneed dough 4 times.

Form dough in to a circle.

Cut into 8 triangles.

Place on parchment-lined baking sheet.

Bake for 16-20 minutes.

Mix powdered sugar with lemon zest and juice until smooth.

Drizzle over scones.

  1. These looks so delicious! Haven’t made scones in a while, so I’m tucking this idea away. I did make Meyer lemon muffins this week. Love it when they are in season.
