i say ho hum to fast food burgers . If I eat a burger, it has to be something special, something with a lot of flavor. The pesto on this burger gives it a lot of flavor, the tomato freshness, and the ooey gooey cheese is just plain fun to eat.

1 pound ground lamb
Salt and pepper
1 teaspoon fresh oregano leaves
6 slices mozzarella cheese
3 Keizer rolls
1 large tomato
Pesto:
1 bunch parsley
3 cloves garlic
1/2 cup Parmesan cheese
1/4 cup walnuts
1/4 cup olive oil
2 tablespoons lemon juice
Salt and pepper
1/2 cup mayonnaise
In a blender, blend parsley, garlic, walnuts, Parmesan cheese and juice; blend for 25 seconds.
Add oil and salt and pepper; blend until smooth.
Mix pesto with mayonnaise. Set aside.
Make 3 lamb patties and salt and pepper both sides.
Heat cast iron skillet to medium.
Add lamb patties to pan; cook for 4 minutes on one side, flip, and cook for 4 minutes.
Add mozzarella, cover, and cook for 3 minutes.
Assembly:
Bottom 1/2 Keizer roll
2 tablespoons pesto mayonnaise
Lamb patty with mozzarella
Tomato
Top 1/2 roll with pesto
