This is an adult grilled cheese. Earthy mushrooms from The Fruitful Forest , zingy, pesto, sourdough bread from Great Harvest Bread, and ooey gooey cheese. Simple.
8 slices sourdough bread from Great Harvest Bread
8 ounces fresh mozzarella
1/4 cup pesto (there are pesto recipes on this blog)
4 ounces lions mane mushrooms, sliced in half on pieces (from The Fruitful Forest)
4 ounces butter
2 teaspoons olive oil
In a skillet on medium heat, add olive oil and mushrooms; cook for 5 minutes or until brown.
Butter one side of each slice of bread.
Spread pesto on second side of each slice.
Top pesto with cheese.
Top with second slice.
Cook in mushroom pan until each side of bread is brown.
