Air Fried Fish Sandwich

Here is something different for Lent. I’m talking to you Micky D. The first thing is fresh fish which I got from Crosby’s Crabs. Second is the breading; you want this fish crisp, so I air fried it at 360 to crisp it up. The fish has a kick, but the sauce cools things right down. I hope you like it.

4 5-6 ounce cod fillets
2 cups buttermilk
1 cup self rising flour
1 cup rice flour
1 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon pepper
1/2 teaspoon garlic powder
Bread and butter pickles
1 medium red onion
Four potato roll
1/2 head of lettuce
1/2 cup Mayo
4 onion slices
1 teaspoon capers
1 teaspoon hot sauce
1 tablespoon pickle relish

Soak fish in buttermilk for 16- 20 minutes.

Mix flour, rice flour, cayenne, salt, garlic powder, paprika, and pepper.

Mix mayo, capers, relish, and hot sauce.

Dredge fish in flour.

Place fish in air fryer and cook at 360 for 16- 20 minutes.

Assembly:
Bottom bun
Lettuce
Tartar sauce with hot sauce
Fish fillets
Onion slices
Pickles
Top bun

Serve with onion rings
