The Zelenski (support Ukraine)

I have made the father of this recipe a couple of times, but I was inspired by current events. I can’t carry a rifle, but I wanted to support Ukraine, and the only way I know is baking. Now, this is a labor-intensive recipe with a lot of whisking. I got some ingredients from Erin’s Elderberries, and the Ukrainian flag’s colors were my guide: elderberries for the blue, and a semi-classic lemon curd cream with the additions of some elderflower flavor for the yellow. So enjoy and support the Ukraine 🇺🇦 people. Give to the Red Cross. I hope you like them.

1 sheet puff pastry in three equal parts
Yellow lemon curd:
5 ounces elderflower jelly
2 tablespoons sugar
3 eggs
3/4 cups lemon juice
2 tablespoons lemon zest
1 teaspoon elderflower liqueur
10 drops yellow food color
8 ounces whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla
Blue pastry cream:
1 cup whole milk
1/2 cup elderberry jelly
1/4 cup sugar
1 teaspoon vanilla
1/4 cup corn starch
3 egg yolks
12 drops blue food color
8 ounces whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla
Top frosting:
2 cups powdered sugar, divided
3 tablespoons cream, divided
8 drops yellow food color
10 drops blue food color

In a sauce pan, add lemon juice, lemon zest, eggs, elderflower liqueur, sugar, and elderflower jelly and heat to medium. Whisk constantly until mixture come to a boil.

Let boil for 30 seconds. Remove from heat and let cool.

In a separate bowl, add whipping cream, powdered sugar, yellow food color, and vanilla and whip to stiff peaks.

When lemon mixture is chilled, fold in whipped cream and refrigerate.

In a clean sauce pan, mix milk, elderberry jam, sugar, and cornstarch. Bring heat to medium. Whisk constantly until mixture is 180 and add 1/4 cup to egg yolks and whisk. Then add another 1/4 cup and whisk. Return egg mixture to main pan. This is called tempering and prevents scrambled eggs. Bring mixture to a boil. Remove from heat and let cool.

In a bowl, add whipping cream, powdered sugar, blue food color, and vanilla and beat until stiff peaks.

When elderberry mixture is cool, fold in whipped cream. Add more blue food color if color is not to your liking.

Heat oven to 425.

Cut puff pastry into 3 equal rectangles.

Place on a parchment-lined sheet; bake for 14-17 minutes or until golden brown. Let cool.

Cut the bottom half off puff pastry.

Mix powdered sugar and cream until smooth and divide. In two bowls and add blue food color to one and yellow to second and frost the pastry to your liking.

Assembly:
Puff pasty bottom
Thick layer of lemon curd
Puff pastry bottom
Layer of elderberry mousse
Layer of puff pasty
Frosting

Refrigerate for 1 hour.

Serve (a serrated knife works grate here).
