I was wondering if chocolate and apples would be friends in a cake. They aren’t, but they do make a good muffin. So after many twists and turns and some revisions, we have a tasty breakfast. Now, don’t use milk chocolate; apples need dark chocolate. We also need some crunch, so some walnuts are invited to the party. So we have fruit and nuts: chocolate granola? I hope you like it.
2 cups flour
2 tablespoons baking powder
1/4 cup dark chocolate cocoa powder
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
2 sticks butter at room temperature
3/4 cup white sugar
3/4 cup brown sugar
1 cup milk
2 eggs
1 teaspoon vanilla
1/2 cup chocolate chips
1/2 cup walnuts
Preheat oven to 350.
In bowl 1 add flour, baking powder, salt, and cinnamon.
In bowl 2 cream butter, sugar and brown sugar until smooth.
Add eggs and vanilla and beat for 1 minute.
Add milk and beat for 1 minutes
Mix bowl 1 into bowl 2 in three parts.
Fold in walnuts and chocolate chips.
Place in greased muffin pans.
Bake for 30-35 minutes or until a toothpick comes out clean.
