This is a classic dish from Portugal; the name translates to green soup. I used local Happy Family Ranch chorizo, fresh kale, potatoes, and I did use boxed broth, but it does have a fresh taste. (I can’t wait for veggies to get to the farmers market!). It’s a summer easy dish. I hope you like it.
1 pound chorizo links
1 10-ounce pack of kale, washed and stems removed
6 medium potatoes or 1 pound baby potatoes
1 large onion, diced
2 cloves garlic, minced
4 cups chicken broth
4 cups water
1/4 cup oil for cooking
In a soup kettle on medium heat, add oil and onions and cook for 5 minutes until translucent. Add garlic.
Slice potatoes thin.
Chop kale in small pieces.
Add sliced chorizo and brown, stirring constantly.
Add kale and stir for 4 minutes.
Add broth and water and stir.
Add potatoes.
Simmer for 1 hour.
Serve.
