Candied Pecan Sandies

Followers of this blog know I spend a good deal of time at farmers markets and because of that, I get to meet some cool businesses. In today’s installment we used the Purposeful Pecan to make an updated Pecan Sandi. The updates are more vanilla, candied pecans and cinnamon. Now, my wife took the lead and made these, and I only made the above changes to the classic. I hope you like it.

12 tablespoons butter (softened)
1/2 cup sugar
1 tablespoon ice water
1/2 teaspoon cinnamon
2 cups flour
1 cup cinnamon candied pecans (from Purposeful Pecan) chopped plus more for the tops
2 teaspoons vanilla

Preheat oven to 325.

Cream butter and sugar for 4 minutes.

Add the rest ingredients and mix.

Make dough into a ball then press down.

Place cookies on parchment lined baking sheet.
