A summer cookie is needed; coconut and lime are as summery as you can get. The umbrellas kept burning, so I had to leave them off. It is a sugar cookie with a lot extra. I hope you like it.
2 1/2 cups all purpose flour
1 teaspoon corn starch
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon ginger
1 1/2 cup sweetened coconut
12 ounces butter, softened
12 ounces sugar
1 egg
2 teaspoons lime zest
1 teaspoon coconut extract
1/4 cup key lime juice
1 teaspoon coconut extract
1 teaspoon lime extract
Preheat oven to 350.
Cream butter and sugar for 4 minutes.
Add egg and lime juice and mix for 2 minutes.
Add lime zest, lime extract, and coconut extract; mix for 1 minute.
In second bowl, add flour, corn starch, ginger, salt, and baking powder.
Mix bowl 2 into bowl one in three parts.
Add coconut and mix.
Place balls of dough on parchment-lined baking sheets.
Bake for 9-11 minutes.
Ohh mmm the recipe reminds me of my grandmama. She loved this.
