This is the result of food boredom, laziness, and a willingness to try almost anything. Confusing isn’t it? Well, I didn’t want anything normal for dinner, not Subway, not any other fast food. I also was not in the mood for the supermarket deli items. So on today’s episode of kitchen roulette, I had the ingredients below and came up with something odd but tasty. So I added crab meat to a bruschetta and placed it on top of a pumpernickel everything bagel from Wierdoughs. I hope you like it.
1 pumpernickel everything bagel, halved (from Wierdoughs at the Haymarket Farmers Market)
8 ounces cherry tomatoes cut in quarters
4 ounces crab meat
4 ounces Italian 6 cheese blend
2 tablespoons fresh basil, chopped
1 teaspoon garlic, minced
1 teaspoon onion powder
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
More cheese for topping.
Preheat oven on broil.
In a bowl add tomatoes, cheese, basil, garlic, crab meat, and onion powder.
Add olive oil and balsamic vinegar.
Salt and pepper to taste.
Toast bagel under broiler for 3 minutes.
Add tomato and crab mixture to the bagel.
Top with cheese.
Broil until cheese is melted.
Serve.
