Here is a fun one for your next brunch. Let’s switch out the home fries for some gnocchi -hey, they are both potato based. The green onions bring freshness, and hot sauce breaks up the richness of the bacon and eggs. I hope you like it.
6 strips bacon
16 ounces gnocchi (store bought is ok)
1/4 cup green onion, diced
4 eggs or more if you want
Salt and pepper
2 teaspoon chives
Hot sauce
Cut bacon into 1/2 inch pieces
In a skillet on medium, add bacon and cook until crispy to your liking.
Remove bacon to a paper towel to drain leaving bacon fat in the pan.
Add gnocchi to pan and cook for 4-5 minutes per side until brown.
In a separate pan, cook eggs either sunny side up or over easy.
Add bacon back to gnocchi pan. Then add green onion.
Add chives.
Assembly:
Gnocchi, bacon and green onions
Egg
Chives
Hot sauce
