Coffee Bacon Jam

Want to up the cool factor on your burgers and chicken sandwIches? This recipe will get your taste buds working. You get bacon, sweetness from the caramelized onions and brown sugar, and the tart balsamic vinegar. It finishes with smokey chili powder, and the coffee brings a counterbalance for the sweetness.

1 pound bacon cut in one-inch pieces (Hayfield Farms)
2 cups onion cut in 1-inch pieces
1/2 cup brown sugar
1 teaspoon black pepper
1/2 cup coffee
1 tablespoon Abundant Acres Poppi’s Chili seasoning
2 tablespoons balsamic vinegar (Manassas Olive Oil)

Heat skillet to medium. Cook bacon to almost crisp. Remove bacon from pan saving most of the fat.

Add onions to fat and cook until almost caramelized, stirring frequently.

Add brown sugar, pepper, coffee, and chili powder and bacon back to pan.

Cook to reduce liquid until almost gone.

Serve on toast.
