Crawfish Cakes

We are back in New Orleans and loving our crawfish. I was at Crosby’s Crabs and saw the package in the counter and brought it home. I used the trinity, some spice, and some mayo to hold it all together. I hope you like it.

12 ounces crawfish tail meat
12 Ritz crackers, crumbled
3 ounces mayo
1/4 cup red pepper, diced
1/4 cup green pepper, diced
1/4 cup red onion, diced
1 teaspoon Old Bay seasoning
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1/2 cup Panko bread crumbs

Mix peppers and onion.

In a bowl add crawfish, crackers, onions, peppers, and seasoning.

Add lemon juice and Worcestershire and mix.

Add mayo.

Form into patties.

Put bread crumbs in a pie pan and coat patties.

Heat skillet to medium; add oil and butter.

Add cakes and fry for 5 minutes per side.

Serve.
