Goat Cheese, Tomato, Garlic, Herb Dip

I always love it when there are new vendors at the farmers market. In this case it’s Happy Creek Cheeses, LLC. I had been working on this dish for a few months but didn’t want to use the store-bought cheese. I was in luck – they had some great products. I hope you like it.

8 ounces goat cheese (Happy Creek Cheese LLC)
2 teaspoons garlic powder
4 ounces grated Parmesan cheese
4 tablespoons olive oil, divided
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon fresh basil, minced
1 teaspoon fresh oregano leaves
1 teaspoon fresh thyme, diced
1/2 cup cherry tomatoes
1 tablespoon balsamic vinegar
1 toasted baguette

Preheat oven to 350.

Cut tomatoes in quarters.

Whip goat cheese and add parmesan cheese.

Add chives, salt, pepper, garlic powder and mix.

Add 1/2 of olive oil and mix.

Add to oven-safe dish.

Top with tomatoes.

Place in oven for 20 minutes.

Cut baguette in 1/4 inch rounds and toast.

Drizzle dip with olive oil and balsamic.

Serve with baguette.
