I know I’m late with this one; summer’s over, and cook outs are done, so let’s just say it’s for tailgating. It’s my different take on potato salad with a little heat and avocado to cool it down. I hope you like it.
3 large potatoes, diced and cooked
4 hard boiled eggs, chopped
1 bunch green onions, diced fine
2 avocados, diced (you may want to add some lemon juice to prevent browning)
1/2 cup mayonnaise
2 tablespoons yellow mustard
1 teaspoon garlic powder
1/2 teaspoon hot sauce
1 teaspoon paprika
In a bowl add cooked potatoes, eggs, and avocados, and mix gently.
Add mustard, mayo, and garlic powder and stir.
Add hot sauce and paprika and mix.
Serve.
