Rote Grutze (I can’t do the two dots over the “u”)

This is a lesser known Oktoberfest traditional dish. It has berries, cream, and sweeteners. I did a couple of updates; first, I added some brandy, and then I added some elderflower syrup to amp up the flavor of the whipped cream. The airline cookies are not traditional because Frederick the Great did not save his airline cookies to make his version. I hope you like it.

1/2 cup Biscoff cookies, crushed and 12 whole cookies.
5 cups berries ( I used strawberries, raspberries, blackberries, and blueberries)
1 teaspoon brandy
1 teaspoon lemon juice
1 teaspoon elderflower syrup (Erin’s Elderberries)
1/2 cup sugar
1/3 cup corn starch
16 ounces heavy cream
3/4 cup water

In a large saucepan on medium heat add water, sugar, berries and cornstarch and cook until it starts to boil. Stir occasionally.

Add brandy and lemon juice and stir.

Cook until it thickens.

Whip cream with elderflower syrup until stiff peaks.

Crush Biscoff cookies, saving 12 for the bottom.

Assembly:
12 Biscoff cookies on bottom
Fruit mixture
Crushed cookies
Top with whipped cream
