Bison (buffalo) with buffalo mozzarella and buffalo sauce. It’s like a heard in every bite. Now, diced onions and spices are common, but the newbie at the party is Panko crumbs that are made from pork rinds, so pork on top of the meaty buffalo. I hope you like it.
1 pound ground buffalo
1/2 cup pork rind Panko crumbs
1 egg
1/2 cup buffalo mozzarella
1/2 cup yellow onion, diced
1/4 cup buffalo sauce
1/4 cup blue cheese crumbles
1 teaspoon Old Bay seasoning
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 cup buffalo wing sauce to top (no, I am putting it twice on purpose)
Preheat oven to 350.
Mix ground meat, pork rind, onions, garlic, OldBay, and pepper by hand until combined.
Add buffalo sauce, egg, mozzarella, and blue cheese and mix with hands don’t over mix.
Make in to balls and place on a foil lined baking sheet.
Bake for 25-30 minutes until internal temp is 165
Serve with buffalo sauce.
