Tart cranberries with subtle matcha flavor. This also looks Christmasy with red and green. The white icing completes the holiday theme. I hope you like it.
1/2 cup unsalted butter
1 cup sugar
1 teaspoon vanilla
1 teaspoon elderflower syrup (From Erin’s Elderberries)
2 eggs
1 3/4 cup flour
1/4 cup matcha powder
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon clove
3/4 cup milk
12 ounces fresh cranberries
2 cups powdered sugar
3 tablespoons milk plus more to make smooth
1 teaspoon vanilla
Preheat oven to 350.
Grease 5 x 9 loaf pan.
In bowl 1 add sugar and butter and cream for 3 minutes.
Add eggs and mix for 3 minutes.
Add vanilla and elderflower and mix.
Add milk and beat for 1 minute.
In bowl 2 add flour, matcha, baking powder, allspice, clove, and salt.
Add and mix bowl 2 into bowl 1 in three installments.
Bake for 55 – 65 minutes.
Let cool for 25 minutes.
Mix powdered sugar, milk and vanilla until it becomes a smooth. Pour over bread.
