Kansas City Mud Parfaits

Mud pie is the dessert of choice for the Kansas City fan. Traditionally it’s cheese cake and pudding on top of a pecan crust. I used mousse, sweet and spicy pecans, and a little vanilla in the cheesecake layer. The original is a baked pie. I am going no-bake because I need the oven for all the other Super Bowl foods I’m doing. I hope you like it.

8 ounces sweet heat pecans from Purposeful Pecan
1 8 ounce cream cheese
1 teaspoon vanilla
1/4 cup sugar
8 ounces cool whip
8 ounces chocolate mousse
2 ounces grated chocolate
Raspberry garnish

Make mousse per package instructions.

Chop pecans medium fine.

Beat cream cheese with sugar until smooth.

Fold in cool whip.

Assembly:
Pecan layer
Cheesecake layer
Mousse layer
Pecan layer
Cheesecake layer
Mousse layer
Whipped topping
Raspberry garnish
