Mexican Pink Cookies

This is a traditional cookie that would have been popular for Valentine’s Day, but I’m a day late. This is at its base a shortbread style cookie. The shocking pink color is fun; I added Fireball to amp up the flavor. I hope you like it.

2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 cup sugar
2 teaspoons Fireball
13 -16 drops red food color

Preheat oven to 350

In bowl 1 mix flour, baking soda, and salt with whisk.

In bowl 2 cream butter and sugar until smooth

Add fire ball and mix.

Add bowl 1 into bowl 2 in three parts.

Add food color and mix. Make it however dark you want them.

Put on rubber gloves you don’t want to be caught red handed.

Use a 1 1/2 inch cookie scoop and make balls.

Place balls on a parchment-lined baking sheet.

Flatten balls with a fork.

Bake for 11 -13 minutes until edges are brown.

Serve.

  1. First time i notice this snack. In the popular fairs, there are some offers of common hot cakes with “cajeta” (burned goat milk from the Bajío zone).
    There is a salad pie done with Poblan chilies,onion, chicken brest and sour cream, cooked in the oven.
