I’m feeling spring. Something light, refreshing, and sweet. It also is a quick recipe to do. It’s a great dish for a pot luck or a church social. I am not a fan of frozen whipped topping, but it works in this application. Meyer lemons are only available this time of year, so jump on this recipe while you can. I hope you like it.
18 graham cracker, divided
6 Meyer lemons, both juice and zest
2 8-ounce bars of cream cheese
1/2 cup sugar
2 teaspoons vanilla
1 teaspoon elderflower syrup
1 16-ounce container of cool whip
8 ounces strawberries, husk removed
8 ounces powdered sugar
Mix sugar and cream cheese until smooth.
Add vanilla and elderflower syrup and mix.
Fold in whipped topping until combined.
Assembly in a 9×13 baking dish:
Layer of graham crackers (6 crackers)
Layer of cheese cake mix
Layer of graham crackers (6 crackers)
Layer of cheesecake
Crush remaining graham crackers and top
Mix powdered sugar and strawberries until smooth in blender. Drizzle on top.
