I can’t remember where I saw this, where it’s from, or what ingredients were in the original. All I know is that we will be having it on Easter Sunday for guests. Spinach, garbanzo beans, onions, garlic, wine, and seasonings. It only takes 20 minutes to make, so I will be doing it a lot. I hope you like.
3 bags fresh triple washed spinach
1 10-ounce can garbanzo beans, washed twice
3 cloves garlic, minced
3 tablespoons minced onion
1 teaspoon seasoning salt
1 teaspoon Ajika spice
1 teaspoon everything Italian seasoning
1/2 teaspoon black pepper
3 tablespoons olive oil
4 ounces white wine
In a large skillet on medium heat add olive oil.
Add 1 1/2 bags of spinach; add more as it reduces.
Add drained garbanzo beans.
Add wine and cook until spinach is completely wilted.
Add garlic, onion, seasoning salt, Ajika, Everything, and pepper.
Cook until wine reduces by half.
Serve.
