This request was from someone at the local grocery store. Now, a dunking cookie should not leave crumbs or fall apart when it comes in contact with a liquid. More importantly, it must get better with time and become one with the liquid. This should work well with coffee, tea, or hot chocolate. Lastly, it should taste good, sweet, and earthy with cinnamon, cardamom, and cherries. I hope you like it.
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cardamom
1 1/2 teaspoon cinnamon
16 ounces unsalted butter
3/4 cup brown sugar
1/2 cup sugar
1 large eggs
1 teaspoon vanilla
1/2 cup dried cherries, chopped
6 ounces sugar for rolling.
Preheat oven to 350.
In bowl 1 add flour, baking soda, cinnamon, cardamom, and cocoa powder and whisk.
In bowl 2 cream butter, brown sugar, and sugar.
Add egg and vanilla and beat for 2 minutes.
Add bowl 2 into bowl 1 in three installments. Beat until smooth.
Add cherries and mix until incorporated.
Roll cookies into 1 1/4 Inch balls and roll in sugar.
Add to parchment lined baking sheets.
Bake for 12-13 minutes.
Serve.
