The purpose of this cookie is to remind you of a pool or a beach on your favorite south sea island. There is candied mango, candied ginger, macadamia nuts with some warm spice. Oh, and white chocolate because I can. I hope you like it.
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cardamom
1 cup butter
1 cup dark brown sugar
1 egg
1 teaspoon dark rum
2 ounces dried ginger, finely chopped
1 ounce dried ginger, finely chopped
4 ounces macadamia nuts, chopped
4 ounces white chocolate chips
In bowl 1 mix flour, salt, baking soda, and cardamom.
In bowl 2 cream butter and brown sugar; beat for 3 minutes.
Add egg, rum and mix.
Mix bowl 1 into bowl 2 in three installments.
Add mango and ginger and mix.
Add chips and nuts and mix.
Refrigerate dough for 1 hour.
Preheat oven to 375.
Scoop dough on a parchment-lined baking sheet.
Bake for 9-12 minutes.
Makes 36.
