Mint Julep Cookies (Derby Weekend)

It’s time for the Kentucky Derby, so it’s mint julep time. Now, some people accuse me of trying to replace Jell-O shots with cookies. Well, maybe I am or maybe I’m not. (I know I don’t have to throw out little plastic cups.) But this is a fun cookie for your next Derby party. It consists of a short bread cookie with lots of mint flavor and just a hint of bourbon. I hope you like it.

1 1/2 cups flour
1/4 cup cornstarch
3/4 cup powdered sugar
2 teaspoons chopped mint
1/4 teaspoon salt
8 ounces cream cheese
4 ounces butter
2 teaspoons bourbon
1/4 teaspoon mint extract
Glaze:
1 cup powdered sugar
2 tablespoons milk (more if needed)
Food color of your choice

Heat oven to 325.

In bowl 1 mix flour, cornstarch, powdered sugar, and chopped mint. Set aside.

In bowl 2 cream cream cheese and butter.

Add bourbon and mint extract and mix.

Mix bowl 1 into bowl 2 in three installments.

Place in freezer for 30 minutes.

Remove and roll out to 1/4 inch.

Use cookie cutter of choice.

Place on parchment-lined baking sheet.

Bake for 16-20 minutes.

Let cool.

Frost.
